Eatin’ at Home

The Man and I are trying VERY hard to keep all meals at the house this month. This is mostly to keep our budget under control, but it will help the waistline as well, of course. This past week wasn’t perfect, but we did have a few meals that would have never happened had we not had this goal. Being tired and hungry after working all day is a recipe for fast food binging, especially if you haven’t set any meat out to thaw that day! I was non-functional Sunday-Tuesday with my back, so that was another challenge we had to get through. Luckily, I have a great guy who has been stepping up with house duties.

Tuesday-

Wednesday- Pasta w/ Chicken Sausage

Thursday- Mexican Bowl w/ rice, black beans, tomatoes, and sausage.

Saturday- Elected to take Mom out for Chinese buffet for Mothers Day. An exception for the occasion.

All in all it was a great first week of our Eat-at-home challenge. A few of those meals were completely thrown together last minute, but it makes me feel good knowing we saved a handful of cash doing it. And for those wondering, the girls ate everything we did… Mostly. They topped their own pizzas, and didn’t care for the chicken sausage (but tried it, at least). I think try are becoming more receptive to seeing something other than nuggets on the table though, so that’s a good thing.

A Holiday Monday

Happy Monday!

I had a day taking my bedroom back from Christmas boxes, toys, and outgrown clothes. I was stopped for a little while to enjoy a tea party, but other than that, it was all business.

I made the girls french toast this morning (one of the only ways to get Abby to eat eggs), so I went ahead and joined them. I made mine a little different, however.

That’s whole wheat french toast with flax sprinkled on top. I sprinkle it on the uncooked side so it sticks to the egg when I flip.  I’m trying to cut back on sugar so no maple syrup today :(. Instead, I spooned on some Apple Butter and sliced half a banana on top. This was pretty darn good!

Lunch was some leftover Chicken & Sausage Gumbo. I wish I had more, but I was cleaning out the fridge, didn’t feel like cooking, and this was all that was left.

And supper was a grilled chicken sandwich with feta and cranberry sauce. It did the trick. This was a homemade bun I made today with some spent grains from The Man’s homebrew. More on that later…

Snacks today included some GORP (good old raisins and peanuts)…

and some homemade hummus and crackers. So easy to make…

This is not *true* hummus, as I’m lacking tahini, but it’s tasty to me and super cheap. A ton cheaper than buying it!

Today is a stretch and strengthen day, but tomorrow is that pesky Tuesday run. Hopefully I’ll actually  get to it tomorrow. Might have to move it to a new location though, as we’ve got some holiday activities in the afternoon.
